Here is my unsolicited advice for your life: Do all your schooling up front. Do get a Masters in CS. Kick that Math degree to the curb. Consider matching the Masters in CS with an MBA or a JD. Consider going for a PhD in CS and then moving into Data Science. This will be lucrative and will expand your math knowledge.

Not really, if you have 30 credit hours more than the baseline for the majors, it's worthwhile changing your status to double degree. Double major is very impressive and don't worry if you can't maintain a 3.6+. In the grand scheme of things, once you're in Law School or a working professional, no one gives a rat ass about GPA. But a double major will last longer, and make you a more well rounded professional compared to the one dimensional pre-professionals with okay LSATs
As for how feasible it is. Double major in none related fields are pretty time consuming, you end up averaging over 16+ credit a semester. The difficult part is whether that 16+ credit is composed of difficult clasess or not. In the case of eecs, it is very much so.
A double degree is longer to accomodate industry standards for both areas of study. Recruiters know this and it would not be an issue.
